Healthy Yummy Soup with Tangy Spicy Salad

Hi every one, enjoy this bowl of yummy soup with tangy spicy salad. The preparation is very easy and has only few ingredients.

For the Soup

  • Beetroot – 2 Nos
  • Tomato – 1 No.
  • Carrot – 1 No.
  • Fresh Pepper Powder – 2 Teaspoon
  • Green Chilli – 2 Nos
  • Ginger – 1 Small piece (about 1/2 inch)
  • Coriander Leaves – 3/4 Cup (for grinding and garnishing)
  • Pudina Leaves – 2 to 3 (for flavour)
  • Salt – To taste
  • Sugar – 1 Tablespoon
  • Bread Cubes – 4 to 5

Steam all together. Once cooled down, peel and grind them to a puree with fresh fresh pepper, green chilies, ginger, coriander leaves (half cup) and pudina leaves. Simmer it on low flame for about 5 minutes. Add salt (as per taste) and  1 tablespoon of sugar. Microwave the bread cubes to become crisp. Garnish the Soup with the rest of the coriander leaves. Serve hot.

For Salad

  • Cucumber – 2 Nos
  • Red Kidney Beans – 1 Cup (boiled)
  • Feta Cheese Cubes – 3 to 4 Nos
  • Lemon Juice – 1 Tablespoon
  • Ginger – 1 Tablespoon (Grated)
  • Salt – As per taste
  • Red Chili Flakes – As per taste
  • Olive Oil – 1/2 Tablespoon

Mix all ingredients in a bowl and give it a toss with the olive oil. Spicy tangy healthy salad is ready to serve.
